Many of these women's concern for this community takes its form in volunteer service work. Such a group is the Sisterhood of the Congregation Beth Israel. They have been inspired by the leadership of their remarkable Rabbi, Dr. Hyman Judah Schnactel-who was chosen to give the President Lyndon Johnson's inaugural Prayer and who has also been honored on numerous other occasions. The recipes chosen are, like our city, a melting pot of cultures, traditions, customs, and tastes that reflect Houston's varied heritage. Corn and Tamale Casserole is an easy but highly seasoned delight from neighboring Mexico. Nearby New Orleans creole and authentic French cuisine are represented by Gumbo and Coq au Vin. Spoonbread and Cornbread remind us that Sam Houston was from Virginia, William Travis from South Carolina, and Jim Bowie from Georgia. There are old recipes dating back from Middle and Eastern Europe that reflect a Jewish heritage of devotion to the home and the celebration in it of various religious festivities and holidays. Gefilte Fish, Matzo Balls, and Blintzes each have their beginning in ancient Jewish tradition and religious observance. The women whose recipes we have used have traveled and lived in many parts of the world. Gemini 7 covered 5.7 million miles in 330 hours and 35 minutes. In 275 pages, we've amassed Chicken Polynesian, East India Curry, German Saurbraten, Veal Marsala, Austrian Chocolate Torte, New England Boiled Dinner and a host of others. The majority of the dishes are neither exotic nor complicated-require no unusual skills or ingredients fro this is not a typical cookbook.
